Spinach & White Beans with a light Italian sauce Spinach & White Beans with a light Italian sauce
Number of Servings: 4


    1 bag frozen Spinach
    1 can White Beans (or Canellini Beans), rinsed
    2 sm. cans sliced Mushrooms
    1 cup Onion, chopped
    2 - 3 Garlic cloves, minced
    2 Tbsp Olive oil
    1 cup of Water
    1 Chicken Boullion cube
    2 tsp Basil Pesto (or any Italian seasonings & black pepper to taste)
    Grated Parmesan Cheese


In a large pan sautee garlic & onions till soft on medium heat. Add other ingredients, turn heat to high & bring to boil. Lower heat & let simmer for 15 - 20 minutes.

You want to cook down a little (some water to steam away), but it should remain moist & there should be some juice left.

Plate & sprinkle some Parmesan Cheese on top.
