Ingredients
-
12 oz peeled and chopped potatoes
7 oz lean ham
half a stick of butter
half a head of cabbage
1 cup chopped carrots
seasonings to taste (i add salt, pepper, minced onions, parsley, and oregano)
Directions
Put peeled and chopped potatoes into pan. Cover potatoes with 2 inches of cool water. Place over medium heat while preparing other ingredients.
Chop carrots, cabbage and ham. Place carrots and ham into pan. Turn heat up to med-high. Once water comes to a boil, put butter in.
Stir occasionally for ten minutes, then place cabbage in pot. Make sure it's completely covered, but do not stir. Cover pot for 5 more minutes or until cabbage is tender. Add seasonings to fit your taste.
Makes 6 large portions. (about 1.5 cups/serving)
Actually gets better the longer it sits, so it's a perfect meal to make ahead of time. Also freezes well.
