    1 can coconut milk
    2 large carrots
    2 large stalks of celery
    1 large onion
    2.5 tbsp ginger root (shredded)
    4 C chicken broth
    3 C roasted butternut squash
    2 tbsp grapeseed oil


Roast squash and carrots in the oven for 30-40 mins
chop celery and onion and grate ginger - cook in oil
blend all cooked veggies and put in pot with coconut milk and chicken broth. Add spices to taste (more ginger, salt, pepper, garlic, cinnamon and maybe a little nutmeg).
