    1 Can Diced tomato
    5 cups low sodium chicken broth
    2 tbls Olive OIl (light)
    1 Cup chopped Onion
    1 Head rough chop escarole
    1 Can Cannellini Beans (drained and rinsed


saute onion & garlic in Olive oil until translucent. add Rosemary and red pepper flakes. Add Escarole and saute until wilted (about 2 Minutes). Pour in Broth and add beans. Simmer low for one hour. Serve with Parmesan & crostini
