    24 oz. potatoes
    1 c. sliced leek
    7 oz. cheddar cheese, shredded
    6oz. yogurt, greek style
    8 slices, bacon
    salt and pepper
    8 mushrooms, sliced
    1 T. olive oil


Prepare bacon in oven for 15-18 minutes, pat off grease and cool. Crumble into bits.

Chop potatoes and cook in boiling, salted water until tender. Drain and mash in pan until a few chunky bits remain.

Stir in cheese, leeks, yogurt and seasonings. Place in baking dish and bake in 350 degree oven for 20 mins.

While baking, saute mushrooms in olive oil until tender.

Top potatoes with mushrooms and bacon bits, return to oven for 5 mins.
