Introduction

Almost has the taste of fried chicken but without all the calories and fat! Almost has the taste of fried chicken but without all the calories and fat!
Number of Servings: 4

Ingredients

    2 Chicken Breast
    1 cup Multi-Grain flaked cereal (I use the store brand)
    1/4 cup italian seasoned bread crumbs
    1/2 cup Lowfat Buttermilk
    3 TBS Olive Oil
    Salt and Pepper to taste
    Cooking Spray

Directions

Rinse off your chicken breast and set aside on paper toweling to absorb the moisture. Crush the multi-grain cereal in a large bowl, add bread crumbs, salt and pepper-set aside. In a separate bowl pour in the buttermilk.

Making sure you have patted dry the chicken breast dip them in the buttermilk, both sides and then dip in cereal mixture coating both sides. Place chicken breasts on a cookie sheet covered with foil and a light spray of cooking spray. Drizzle 1 1/2 TBS of olive oil over each chicken breast.

Bake at 365 degrees for 50 minutes turning over 1/2 way through the cooking time.
