    2 cans tuna packed in water, drained
    1 C quinoa
    2 cloves garlic
    3 tomatoes, chopped
    3 celery stalks, chopped
    2 carrots, shredded
    1 bunch flat leaf parsley, chopped
    1/4 C green onion, chopped
    cayenne pepper to taste
    1 tsp olive oil
    juice and zest from one large lemon
    2 C chicken broth


Rinse quinoa and boil in chicken stock according to package directions.

In a large bowl, mix quinoa, tomatoes, celery, carrots, and onion. Cover and refrigerate for at least 2 hours.

Ina small bowl, mix lemon juice, zest, garlic, oilve oil and cayenne pepper.

Add dressing and tuna to quinoa. Mix well. Salt and pepper to taste.
