    8 eggs
    1 cup diced asparagus
    10 cherry tomatoes
    .5 cup portobello mushrooms minced
    .5 onion
    2 poached chicken breasts, diced


makes 12 .3333 cup servings.
Heat oven to 350
grease a 12 muffin pan with veg oil
poach chicken, prep the veggies
spoon in all ingredients except the eggs
pour beaten eggs about 3/4 full into each cup
bake 20-30 minutes
