Number of Servings: 8


    1-15 oz canned Pumpkin
    1-12 oz can EVAPORATED milk
    3 egg whites (may use 3/4 c egg substitue instead)
    1/2 tsp salt
    3 tsp Pumpkin pie spice (1 Tbsp)
    1/3 to 2/3 c Splenda for baking (this is to your taste)


Blend 3 egg white and splenda (1/3 c or more to taste) until egg whites are slightly frothy, add 1 - 15 oz can pumpkin, 1 -12 oz can fat free EVAPORATED milk,1/2 tsp salt & 1 Tbs Pumkin Pie spice. Beat on meium until well blended. Pour into a 9x9 pan sprayed lightly with cooking spray. Bake at 400 for 15 min. reduce heat to 325 & bake additional 45 min or until knife inserted comes out clean.
