    1lbs 2ozs.mashed potatoes
    1 1/3 cup cooked chicken chopped
    1/3 c cooked ham chopped fine
    1TBLS herbs
    2 eggs lightly beaten
    salt and pepper
    1/4 cup skim milk
    2 c bread crumbs
    2TBLS light extra virgin olive oil (for shallow frying add a bit more if needed


in a large bowl blend potatoes chicken ham herbs 1 egg and season with salt and pepper.

shape into small balls or flat pancakes

add a little milk to 2nd egg

place bread crumbs on a plate. dip the balls in the egg and milk mixture and coat with bread crumbs coating completely

Heat the oil in a large skillet and cook the fritters until golden brown.
