Ingredients

    1 medium zuicchini, cut into bite-sized pieces
    1 medium summer squash, bite-sized pieces
    1 medium red bell pepper, bite-sized pieces
    1 medium yellow bell pepper, bite-sized pieces
    1 medium green bell pepper, bite-sized pieces
    1 pound fresh asparagus
    1 red onion, sliced
    3 tablespoons extra-virgin olive oil
    1/4 tsp. salt
    1/8 tsp. black pepper

Directions

Heat oven to 450 degrees F. Place vegetables in a large Ziploc bag. Toss with olive oil, salt and pepper to mix and coat. Spread in single layer in large roasting pan. Roast for 30 minutes, stirring every ten minutes, until vegetables are lightly browned and tender.
