Introduction

This is a great way to use leftover turkey. This is a great way to use leftover turkey.
Number of Servings: 4

Ingredients

    3 tablespoons olive oil
    1 tablespoon chili powder
    3 tablespoons flour
    1/2 teaspoon salt
    1/2 teaspoon onion powder
    1/2 teaspoon garlic powder
    3 cups chicken or turkey broth
    1 cup turkey
    1/4 onion
    8 ounces colby jack cheese
    8 corn tortillas

Directions

Heat olive oil in small sauce pan. Add chili powder and flour, and whisk over medium heat for about 3 minutes. Slowly add chicken stock while whisking. stir in salt, onion powder, and garlic powder. Cook 5 minutes stirring occasionally. Remove from heat.
In food processor combine turkey and onion. Pulse a few times until well chopped.
Place tortillas on a plate and cover with wet paper towel. Microwave on high for 20 seconds or until soft enough to roll.
Place about 1/8 cup of turkey in each tortilla and roll. LIne rolls in small baking dish, and pour sauce over the top. Put cheese over the top and bake at 350 deg. for 15-20 minutes, or until hot in the middle.
