    8oz dried vermicelli
    4 cloves garlic, minced
    1 medium onion chopped
    2 med. zucchini, thinly sliced
    1 green bell pepper
    1 cup fat free, low sodium chicken broth
    2 cups cooked chicken, shredded
    1/2 cup fresh basil, chopped or 3 TBSP dried basil (I used)
    1/3 cup sun dried tomatoes


Sliver dried tomatoes, and soak in water to soften.

Bring 8 cups water to a boil in a 4-5 qt saucepan. Add pasta and cook 8-10 minutes. Add pasta and cook 8-10 minutes.
Meanwhile, heat oil from tomatoes in a wide nonstick frying pan. Add tomatoes to fry pan along with garlic and onion.
Saute a few minutes. Add zucchini and bell pepper. Cook, stirring often until vegetables begin to brown, 8-10 minutes.
Pour broth over vegetables and bring to a boil. Drain Pasta and add to vegetables with chicken and basil. Life with two forks to mix. Transfer to a platter.

  • The recipe does not list tomatoes. How much dried tomatoes are needed?
    This line is included twice in the directions. "Add pasta and cook 8-10 minutes."Sounds interesting. I might try it when the amount of tomatoes is added.

    1/3 cup of slivered tomatoes. Oops! Sorry!

    I just made this last night for the first time. It was really good. DH loved it.
