Number of Servings: 20


    Zucchini, 2 cup, grated
    Egg, fresh, 3 large
    Canola Oil, .25 cup
    Unsweetened Apple Sauce, .75 cup
    Granulated Sugar, 2 cup
    Vanilla Extract, 1 tsp
    Baking Soda, 1 tsp
    Salt, 1 tsp
    Baking Powder, .5 tsp
    Cinnamon, ground, 3 tbsp
    Flour, white, 3 cup


Combine eggs, applesauce, oil and sugar until smooth. mix in vanilla and zucchini. Add remaining ingredients and pour into two bread pans that have been greased and floured. Bake 350 for 1hr.
