Ingredients

    2-3 boneless skinless chicken breast, cut up
    3 cups fresh mushrooms, sliced
    4 carrots, pealed and sliced
    3/4 cup long-grain rice
    1/2 cup onion, chopped
    1 tsp chicken bouillon granules
    1 tsp poultry seasoning
    2 cups water
    1/4 tsp salt

Directions

Spray a 12-inch skillet with nonstick cooking spray. Brown chicken pieces on all sides over medium heat, about 15 minutes. Remove chicken.

Drain fat from skillet, if necessary. Add mushrooms, carrots, rice, onion, bouillon, poultry seasoning, water, and salt. Place chicken atop rice mixture. Cover; simmer 30 minutes or until chicken and rice are done.
