Introduction

A great rice and chicken casserole. You may substitute or add asparagus, broccoli, or mixed vegetables with the green beans. A great rice and chicken casserole. You may substitute or add asparagus, broccoli, or mixed vegetables with the green beans.

Ingredients

    2 tbs canola oil
    1 medium onion, diced
    3 cups skinless, boneless chicken thighs
    2 14.5 oz cans of green beans
    1 can sliced water chestnuts, chopped
    1 jar pimentos (4 oz)
    2 10.75 oz cans condensed cream of chicken soup
    1 cup mayonnaise
    2 cups brown rice
    1 cup grated sharp cheddar cheese

Directions

Heat oven to 350 degrees.

Heat canola oil in medium skillet over medium heat. Add onion and garlic and saute til onion is translucent. Remove from heat and mix into large bowl.

Add all ingredients into the large bowl and mix.

Spray cooking spray into medium or large casserole dish. Pour mixture into the bowl and bake for 25 minutes or until it bubbles. Remove from heat and let stand for 5-10 minutes, then serve. Serves 8.
