Introduction

A protein & fiber filled meal that will keep you full for hours! A protein & fiber filled meal that will keep you full for hours!
Number of Servings: 8

Ingredients

    2 cups quinoa, cooked (about 1 cup uncooked)
    2 cups lentils, cooked (about 1 cup uncooked)
    2 tbsp olive oil
    1/4 cup pine nuts
    1 medium onion, chopped
    1/4 cup lemon juice
    1/4 cup fresh parsley
    salt & pepper as needed

Directions

Cook 1 cup quinoa and 1 cup lentils according to instructions.

Saute onion and pine nuts until lightly browned.

When finished, mix quinoa, lentils & onions.

Add lemon juice, parsley and olive oil. Stir.

Serve hot & enjoy!

    This sounds interesting and healthy ... can leftovers be frozen? - 4/2/10

    I haven't tried to freeze this recipe, but I'm sure you can! It'd be great for lunchtime, and the recipe makes a lot so it could last you about a week.
