    1 Whole Wheat Pizza Crust (Whole Foods prepared found in bread isle)
    1 Boneless/Skinless Chicken Breast (or substitute with canned chicken)
    1 Medium Tomatoe (sliced)
    2 oz Mozzarella Cheese (part skim milk)
    1/2 cup Artichoke Hearts (canned or marinated)
    1/2 cup Sun Dried Tomatoes (marinated)
    2 Tbsp Olive Oil
    Salt and Pepper to taste


Preheat oven to 325 degrees and lightly oil cookie sheet or pizza stone. Wash and dry chicken breast. Cut into bite size pieces or strips. Sprinkle salt & pepper to taste and cook over medium-high heat in 1 Tbsp olive oil until done stirring frequently. Spread 1 Tbsp olive oil (or use oil from artichokes or sundried tomatoes) on pizza crust then scatter all ingredients on pizza crust. Bake for 10 minutes, until cheese and crust has browned. Makes 4 servings.
