    2 Tbsp. olive oil
    1/2 yellow onion, diced
    8-12 oz. sweet or hot Italian-style ground turkey sausage
    16 oz. linguine
    2 large carrots, grated (or 1 1/2 cups pre-shredded carrots)
    2 tsp. dried oregano
    15 oz. diced tomatos with their liquid
    15 oz tomato sauce
    1 Tbsp. sugar


In a large skillet, heat the oil over medium heat and sauté the onions and sausage for 3 - 5 minutes, until the onions are translucent and the sausage is starting to brown. Meanwhile, cook the pasta according to the package directions.

Add the carrots and oregano to the skillet, and cook them for 3 - 4 minutes until the carrots become tender. Add the tomatoes and sugar. Simmer the sauce for about 10 minutes while the linguine cooks.

Combine the noodles and sauce in a large bowl. Top it at the table with Parmesan cheese, if desired.
