Ingredients

    1 lb fresh or frozen shrimp
    4 oz Hickory Frams sausage, chopped
    1 14.5 oz, undrained diced tomatoes, no-salt added
    3 cloves garlic
    1 tsp Cajun seasoning
    2 cups cooked brown rice

Directions

Thaw shrimp, if frozen. Peel shrimp, leaving tails intact. Devein shrimp. Rinse shrimp; pat dry with paper towels. Set aside.

In a 4 quart Dutch oven cook sausage, onion , and bell pepper over med-high heat about 5 mins or until onion begins to brown. Add tomatoes, garilc, and cajun seasioning; stir until combined. Bring to boiling; reduce heat. Simmer uncovered for 5 mins.

Stir in shrimp. Return to boiling; reduce heat. Cover and simmer for 2-3 mins or until shrimp turn opaque. Serve w/ rie.
