Ingredients

    2.25 lbs. Shark
    1 cup Orange Juice
    Juice of 2 Lemons
    3 Tbsp Olive Oil
    1.5 Tbsp Chili Powder
    1/4 tsp Cayenne

    2 large oranges, peel and pith removed, cut into cubes
    1 large red onion, chopped
    1/4 cup cilantro, chopped
    1 clove garlic, minced
    1 jalapeno pepper, minced
    1 large avocado, chopped

Directions

Cut shark into 1" cubes.

In a non-reactive bowl, combine orange juice, juice of 1.5 lemons, olive oil, chili powder and cayenne pepper. Marinate shark for at least 30 minutes at room temperature.

Meanwhile, put orange cubes, red onion, cilantro, garlic , pepper and avocado in another bowl. Let stand for up to 1 hour. Salt and pepper to taste.

Heat a nonstick skillet to medium-high and cook the shark with a bit of the marinade. Allow the marinade to come to a boil, turning the shark occaissionally. Cook until shark is tender, about 12 minutes.

Serve salsa over shark. Serves 8.

    Incredible!
    Difficult to find a good shark recipe: this is the best one so far for me. This recipe is good for company too because it is visually pleasing.
    I gave the shark a preliminary 5 hr soak in skim milk before I drained it & added it to the marinade.

    The salsa is very good. I added some orange & yellow pepper to the salsa. I've never had shark before. But I thought the marinade & seasoning worked nicely with the meat.

    Sides: steamed green beans & 1/2 of a sweet potato.
