Introduction
YUMMY MUFFINS! I love this recipe! YUMMY MUFFINS! I love this recipe!Number of Servings: 12
Ingredients

1 1/2 cup whole wheat flour
1 cup rolled oats
1/4 cup brown sugar
1/4 cup white sugar
2 tsp baking powder
1 tsp baking soda
1 large egg
3/4 milk (I use 2%)
1/3 cup unsweetened applesauce
1/2 tsp vanilla
1 C mashed banana (about 2 big bananas)
Directions
Combine flour, oats, sugar, baking powder and soda.
In a large bowl beat egg slightly. Stir in milk, applesauce and vanilla. Add banana and mix thoroughly. Stir in flour until just combined. Be careful not to over mix the batter.
Put in muffin tins (don't forget the cooking spray!)
Bake at 400 for 18-20 minutes.
Makes 1 dozen large muffins.
I added about 1/2 c of chocolate chips to the batter. If you do that, the fat content goes from 1.6 g to 3.7 g, and the calories per muffin go from 144 to 177.
