Introduction

I really needed something to do with the impulse of buying zucchini at our local flea market, which just boasts with produce stands! I really needed something to do with the impulse of buying zucchini at our local flea market, which just boasts with produce stands!

Ingredients

    Zucchini, 3 c, sliced
    Olive Oil, 2 Tbsp
    Garlic, 1 clove
    sea salt & freshly cracked black pepper
    Balsamic Vinegar, 1 Tbsp

Directions

1. Prehead the oven to 450 F. Lightly oil a baking sheet.

2. If you are using the garlic, combine it with the oil in a small bowl. Arrange the zucchini skin-side down on the roasting pan. Lightly brush the cut sides with the oil and sprinkle lightly with salt and pepper.

3. Roast for about 15 minutes, until the squash are tender and lightly browned.

4. Transfer the squash to a serving plate. Drizzle with the balsamic vinegar. Serve hot.
