Ingredients

    1 cup white beans
    1 roasted and peeled red pepper, roughly chopped
    1/2 tomato, roughly chopped
    1 shallot, diced
    2 tbsp fresh parsley, chopped
    1 tbsp olive oil
    salt and pepper to taste

Directions

Mix all ingredients and enjoy with some fresh bread or soup. Enjoy!
