    1 medium onion, chopped
    2 stalks celery, chopped
    1 T olive oil
    4 C chicken broth
    8 C fresh broccoli chopped
    1 1/3 c nonfat powdered milk
    2 T corn starch
    2 c nonfat milk
    2.5 oz shredded chaddar cheese
    pinch of thyme
    salt & pepper to taste


Makes 9 1-cup servings

Heat olice oil in large pot over medium heat. Add onion and celery and cook until translucent. add broth and broccoli. Cover and simmer until broccoli is tender.

Using an imersion blender puree soup to desired consistency. Add corn starch in a slurry and bring to boil. reduce heat and add powdered milk, milk and cheese. Be careful not to boil soup once dairy is added or you might "break" it. :)
