This is a low fat vegetarian recipe. It was a hit with my kids! This is a low fat vegetarian recipe. It was a hit with my kids!
Number of Servings: 8


    Onions, raw, 1 cup, chopped
    Broccoli, fresh, 2 bunches
    Veggie Broth 3 cup
    Red Star, Nutritional Yeast, Vegetarian Support Formula, 1.5 Tbsp
    Cumin seed, 0.125 tsp
    Nutmeg, ground, 0.125 tsp
    Fat free half and half, 0.25 cup
    Cheese, Swiss, Reduced Fat, 2.75 oz


Coat a sauce pan with cooking spray. Cook onion over medium heat until softened, stirring occassionally. Add broth and broccoli and 2 cups of water, bring to a boil. Stir in yeast and spices. Reduce heat and simmer until broccoli is tender. In batches puree until smooth. Return to pan. Stir in half-and-half and heat over low heat until hot. Sprinkle with cheese to serve. Serves 8.
