    2 lbs. potatoes, diced
    1/2 lb. mushrooms, quartered
    1 onion, chopped
    5 cloves garlic
    1 1/3 lbs. chicken breast, cut into bite-sized pieces
    4 Tbsp. olive oil
    1 tsp. salt
    1/4 tsp. freshly ground black pepper
    1/2 tsp. thyme
    1/4 c. sour cream
    fresh parsley


1. In a large frying pan, heat 1 tablespoon of the oil over moderate heat. Add the onion, garlic, and mushrooms and cook, stirring occasionally, until the mushrooms are browned, about 10 minutes. Add the chicken, 1/2 teaspoon of the salt, the pepper, and the thyme. Sauté until the chicken is almost cooked through. Remove the mixture from the pan.
3. Wipe out the frying pan and then heat the remaining 3 tablespoons oil over moderately high heat. Add the diced potatoes, cover and cook until well browned *stiring occasionally and fully cooked through. Stir in the chicken and mushrooms, the sour cream, and the parsley. Cook until just heated through.
Tip: You can add cooked chicken and turkey at the end to use up leftovers!
