    about two pounds potatoes par boiled and sliced
    3 med size fresh tomatoe
    1 clove garlic
    2 tbspn olive oil
    1/2 tspn salt
    1/2 tspn black pepper
    1/2 tspn oregano


Boil Potatoes about 15 mins or until tender, then slice. Brown garlic in olive oil. Remove garlic and add tomatoes, salt, pepper, heat about 5 minutes. Add potatoes and cook about 10-15 minutes. Add oregano, and serve immediatley.
