    1 cup all-purpose flour
    1/2 tsp granulated sugar
    1/4 tsp salt
    1/2 tsp vanilla extract
    1 cup nonfat milk
    2 egg whites


1. Combine flour, sugar and salt in a bowl.

2. Make a well in the center of the flour and add the milk, egg, and vanilla. Beat well to combine.

3. Heat a lightly oiled frying pan over medium-high heat.

4. Pour the batter into the pan (about 1/4 cup per crepe). Tilt the pan with a circular motion so that the batter coats the surface evenly.

5. Cook for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.

6. Serve hot. I usually sprinkle them with sugar or serve them with fruit and whipped cream... however you like them best!
