This is a dish I make for my lunches. It can also be a fabulous side dish. This is a dish I make for my lunches. It can also be a fabulous side dish.
Number of Servings: 4


    1 cup Wild Rice
    1 Tbsp Butter
    1 3/4 cup Chicken Broth
    1/2 cup Orange Juice
    1/4 tsp ground Allspice
    1/4 tsp Curry powder
    1/4 tsp ground Turmeric
    2/3 cup Dried Cherries
    1/3 cup Dried Apricots, chopped
    1 Apple, chopped
    1 Tbsp Pine Nuts


Saute the wild rice in the butter over medium heat for approximately 5 minutes. Add the chicken broth, orange juice, and the spices. Bring to a boil, then reduce the heat to low. Cover and simmer for 5 - 7 minutes. Add the dried cherries, apricots and apple. Cook for another 8 - 10 minutes. Stir in the pine nuts.
