    2 eggs
    6 oz. chopped chicken breast, no skin
    5 dill pickle slices, chopped
    1 t. minced garlic
    1 T. minched raw onion
    1-1/2 T. Homemade Mayonnaise (see recipe)
    1 T. Dijon-style mustard, or to taste
    sliced tomato (optional)


Hard-boil the eggs, cool, peel, chop and put into a mixing bowl. Add to bowl chicken, pickle, garlic, onion, mayo and mustard.
Variation: Stuffed Tomato Remove stem from a medium tomato and turn it upsdie down. Slice in wedges from the bottom almost through. Fan the attached wedges into a "star". Fill tne center with tuna, chicken, shrimp, or crab salad. (Adds about 4 grams carbs)
