I sort of modified this recipe to suit my low carb needs. I sort of modified this recipe to suit my low carb needs.
Number of Servings: 10


    1 Leek
    1 medium onion
    5 stalks green onion
    5 stalks celery
    4 cups chopped cabbage
    Parsley to taste
    2 Bay leaves
    3 or 4 units chicken breast without skin cut into 1 inch pieces.
    .25 cup olive oil
    10 cups water


Dice onions, celery and green onions. Remove thicker outer leaves of Leek stalks. Wash remaining leek thoroughly. Slice Leek and add to onions, celery and green onions.
Heat .25 cup olive oil in a big stew pot.
Add celery, green onions, onions and leeks.
Saute over medium heat for about 5minutes
Add 10 cups of water, 2 teaspoons black pepper, 2 Bay leaves and salt to taste.
Bring to a boil
Add diced chicken breast pieces and bring back to a boil for 15 minutes
Add cabbage and parsley.
Simmer for another 10 minutes.
Makes about 10 cups of soup.

    I hope you like it. Its been a staple in my diet program and i find it quite satisfying especially for dinner. I am not perfectly sure about portion sizes and yield. I would love to know how it turns out for you. A variation to this is adding carrots usually in the third week.
