VERY creamy and yummy chicken enchiladas. VERY creamy and yummy chicken enchiladas.
Number of Servings: 8


    Approx 12 ounces of Cooked Chicken Breast
    1 8 oz Bar of Philly Cream Cheese (1/3 less fat)
    1 8 oz pkg Kroger brand quesadilla cheese
    1 7 oz can of green chiles
    2 10 oz cans of green enchilada sauce
    1 7 oz can of mushrooms, minced
    Mrs. Dash original seasoning


Spray non-stick cooking spray in frying pan and fry chicken with Mrs. Dash seasoning. AFter cooked, cut up chicken into tiny pieces. Place back into frying pan, and add all cream cheese, can of chiles, mushrooms (which I mince), and half of one can of the green enchilada sauce. Once creamy and warm, I add 1/2 bag of cheese to thicken. Place approx 1/8 of mixture into tortilla and roll up. Place in casserole dish. Pour remaining 1 1/2 cans of enchilada sauce over top, then top with remaining cheese. Cover and back until bubby...approx 20 minutes. Makes 8 enchiladas. Calculated for 8 servings, but I usually serve 4 (2 each).
