    a few chicken breast shredded
    a can corn
    a can diced tomatos
    one packet taco or enchilata mix
    8 c chicken broth
    low fat sour cream
    tortilla chips or sliced baked corn tortillas


I recommend precooking a few chicken breasts in crockpot. I throw a few frozen ones in with a sprinkle of sea salt and pepper a few hours later I have great chicken.

Shred it throw in a pot with 8c chicken broth add one can of diced tomatos and one can of corn (drained) and one packet of either taco or enchilata powder. It is a great soup I slice up some corn tortillas and bake them til crunchy and toss them in with a big of cheese and some fat free sour cream. the corn takes down the spiciness for the kids they love it too.
