    onion, 1/2 cup chopped
    garlic, 3 cloves chopped
    celery, 1/4 cup chopped
    1 cup dry lentils
    4 cups of water
    4 tablespoons vegetable bouillon
    1 cup shredded cabbage
    1/2 cup sliced squash
    1/2 cup sliced zuchinni


Saute onion, garlic and celery in 1 Tablespoon olive oil. Add lentils, 4 cups of water and bouillon. Lightly boil for 20 - 30 minutes (until soft). Add vegetables, lower heat to low. Cook for 10 minutes.
