    1 can of Aylmer diced tomato's
    3 cloves chopped garlic
    2 t basil
    2 t oregeno
    2 t ground pepper
    2 t tobasco
    (of course season to YOUR taste)

    1/2 c red pepper
    1/2 c green pepper
    1/2 c chopped mushroom
    (or whatever you like)

    1/3 c. shredded light cheddar cheese


Tomato Sauce: Add all ingredients to a pot, simmer together for about an hour or until you are satisfied with the juicyness. I usually make quite a few servings of this ahead of time and freeze I can pull it out any time.

On medium high heat, fry up the veggies.

Heat oven. In your baking dish, put down a tortilla and add veggies. On the next totilla put as much refried beans on it. Then add another tortilla shell, cover it with veggies. Add another tortilla shell and cover it with HALF (or to your taste) of the tomato sauce. Add some light cheese and bake for 15 minutes and then broil for about 5 minutes.

I have no reason why I call this an enchillada but I do! You can easily add some meat or chicken or whatever suits your taste. Hope you enjoy!
