Ingredients

    2 chicken breasts
    2 cans diced tomatoes
    4 cloves garlic
    1 medium onion sliced thin
    1 red bell pepper julienne
    1/4 c white wine
    1 t oregano
    2 bay leaves
    S&P
    1 t EVOO

Directions

makes 6 servings

slice chicken thin across grain
slice onions and bell pepper thin
mince garlic (garlic press is fine)

In a heavy bottom sautee pan heat EVOO until shimmering. Add chicken, cook until it starts to brown. Add onions, stirring well. Cook until onions start to brown. Add garlic, cook 1 min longer. Delgaze pan with white wine, scraping up bits from bottom of pan. Add tomatoes, herbs, S&P, reduce to simmer and cook about 10-15 minutes.

Serve over cooked pasta, quinoa or rice.
