    1/2 medium onion, chopped
    1/2 medium green pepper, chopped
    1/2 medium sweet red pepper, chopped
    2 garlic clove, minced
    1/2 teaspoon dried basil
    1/2 tsp coriander
    1/2 tsp ground cumin
    1/4 tsp chili powder
    1/4 tsp cayenne or to taste
    1/8 teaspoon black pepper
    1/3 cup tomatoes
    1/2 (15 ounce) can black beans, rinsed and drained
    1/2 cup corn niblets
    1/2 cup cooked long-grain rice
    salt to taste
    1-1/2 teaspoons red wine vinegar or lime juice


In a nonstick skillet that has been coated with nonstick cooking spray, saute the onion, green and red peppers, garlic, herbs and spices until tender. Stir in tomatoes and corn. Add beans, rice and vinegar; heat through. Transfer to a serving dish; garnish with sour cream and avocado or shredded cheese (garnished not included in calorie count).
