    * Pam Cooking Spray - 1/3 sec. spray
    * Spinach, fresh, 1 cup
    * mushroom, fresh, 1/2 cup sliced/pieces
    * Egg white, 1 serving (I use All Whites)
    * Kraft Finely Shredded Sharp Cheddar Cheese, 0.25 cup
    * Salt, to taste
    * Pepper, black, to taste


Spray small fry pan with Pam. Place veggies in pan and saute until spinach is wilted and mushrooms begin to soften. Add egg whites and cook until pretty well set, then flip them over. Add salt and pepper to taste and top with cheddar; fold.
Serve with whole wheat English muffin or toast.

Note: Any vegetable could be used, depending on what you have on hand. I've added onions, grape tomatoes, peppers. It makes a great quick dinner or lunch as well as breakfast. Feta cheese could also be substituted for the cheddar.
