I love when I can get buffalo roasts for stew. Buffalo is the leanest meat you can buy and it has the added benefits of high iron content and high protein content. Cooking it in a slow cooker in liquid such as stew gives you a rich flavorful and healthy meal! I love when I can get buffalo roasts for stew. Ingredients

    2 cups baby carrots
    3 lbs buffalo chuck roast, trimmed and cut into 1" pieces
    1 envelope Lipton Onion Mushroom soup and gravy mix
    2 (14-1/2 oz) cans beef broth
    1 (14-1/2 oz) can Rotel tomatoes with chiles
    2 cups water
    2 cups raw pearled barley
    1 cup frozen green peas

Directions

Place carrots and buffalo in slow cooker. Mix together soup mix, broth, tomatoes, water and barley. Pour over beef. Cook on HIGH for 4 hours. Add green peas and cook 1 hour longer. Makes 8 servings.
