Introduction

Ingredients

    1/2 package thai rice noodles/sticks
    2 tablespoons vegetable oil
    1 boneless, skinless chicken breast diced or thinly sliced
    1 large egg
    1 shallot minced
    2 cloves garlic, minced
    Chili pepper flakes to taste (optional)
    4 teaspoons fish sauce
    2 tablespoons tamarind concentrate
    2 tablespoons sugar
    1 cup mung bean sprouts
    1/2 lime cut into wedges
    3 or 4 tablespoons cilantro




Directions

Soak the dry noodles in lukewarm water while preparing the other ingredients, for 5-10 minutes.

Use a wok, if you don't have one than a large pan will do. heat wok to high.

In a small bowl combine tamarind, fish sauce, sugar, chili flakes and set aside.

Heat your wok to high (add oil to wok before it gets to temp). Cut up your chicken and mince shallot and garlic together. When wok is heated add your chicken, shallot and garlic and cook until they start to brown.

Drain noodles and add to the wok with chicken, garlic and shallot. Add the sauce to the wok and stir until incorporated. Move noodles to one side of wok, add the egg and scramble on the clear spot, then mix into noodles. Turn off heat to the wok and add bean sprouts.

Plate and serve with a lime wedge and cilantro to top if you like.
