    4 veal cutlets
    1/2 t. salt (approx.)
    4 slices beef pastrami (or salami)
    6 slices Swiss cheese
    1 egg, well-beaten
    1/4 c. Parmesan cheese, grated
    4 T. butter
    1/4 cup dry white wine
    (you'll also need some string)


Preheat oven to 350. Wash veal cutlets and pound flat. Season with salt and pepper to taste. Top cutlets with pastrami/salami (one slice each). Roll up and tie with string. Dip rolls in well-beaten egg. Roll in Parmesan cheese. Melt butter in a skillet. Saute' veal rolls until brown all around. Place in an oven-proof dish. Pour on remaining liquid from pan. Add white wine. Top with 2 slices of Swiss cheese. Bake at 350 for 30 minutes. Remove strings and serve. 2.6 grams of ECC, 42.8 grams of protein. Makes 4 servings.
