    Veggie Mix:
    ~Olive Oil, 2 tsp
    ~Peppers, sweet, red, fresh, 1/2 cup diced
    ~Green Peppers (bell peppers), 1/2 cup diced
    ~Onions, raw, 1 medium diced
    ~Red Ripe Tomatoes, 1 (14.5 oz can)

    Egg Mixture:
    ~EggBeaters' egg substitute 2/4 cup
    ~Egg beater egg white, 3/4 cup
    ~Market Pantry Fat Free Skim Milk, 1 cup
    ~Parmesan Cheese, grated, 1/4 cup
    ~Salt, 1/4 tsp
    ~Pepper, black, 1/4 tsp
    ~Italian Seasoning 2 tsp
    ~Flour, white, 2/3 cup


Cooking 350F in 7x11in pan or 9in pie pan

~ Heat oil in skillet, add peppers & onions and cook until soft
~ Stir in tomatoes and cook until water evaporates
~ Set aside to cool
~ In large bowl beat together eggs, milk, parmesan, salt and pepper
~ Whisk in flour
~Move Veggies to prepared pan, pour egg mixture over
~ Bake about 35 min (when eggs set)
~ Cool for 10 min and Enjoy!
