Number of Servings: 18


    2 c. flour
    1 c. Splenda
    2 1/2 tsp. baking powder
    1/2 t. baking soda
    1/4 t. salt
    1 T. lemon juice
    1 t. lemon zest (grated finely)
    6 oz. container light lemon yogurt
    3/4 c. 1% milk
    4 T. melted butter
    2 large eggs
    1 1/2 c. frozen (or fresh) blueberries


Heat over to 400. Line muffin cups. Combine dry ingredients. Whisk together lemon juice, zest, yogurt, milk, butter and eggs then stir into dry mixture just til moistened. Fold in blueberries. Fill muffin cups about 3/4 full, bake 20 minutes. Makes 18.
