Ingredients

    3 cups all-purpose flour
    1 T. ground cinnamon
    1 t. baking soda
    1 t. salt
    1 1/4 c. vegetable oil
    3 eggs, lightly beaten
    2 c. white sugar
    2 c. peeled, pitted, & chopped peaches

Directions

1. Preheat oven 400 degrees. Line muffin pan w/ 24 cups.
2. In a lg. bowl, mix flour, cinnamon, baking soda, & salt. In separate bowl, mix oil, eggs, & sugar. Stir oil mixture into flour mixture just until moist. Fold in the peaches. Spoon into muffin cups.
3. Bake 25 minutes in preheated oven, until toothpick inserted in center of muffin comes out clean. Cool 10 minutes before turning out onto wire racks to completely cool.
Yields 24 muffins
