    2 15.5 oz cans garbanzo beans (chickpeas) drained and rinsed
    1 small can sliced black olives, drained
    1/2 cup jarred roasted red peppers, drained and chopped
    1/2 large red onion, chopped
    1 medium cucumber, peeled, seeded and chopped
    1/4 cup feta cheese
    2 Tbsp red wine vinegar
    juice of one lemon
    1 Tbsp extra virgin olive oil
    1 tsp ground oregano (or more to taste)
    kosher salt to taste
    fresh ground pepper to taste
    2-3 garlic cloves, minced


Mix ingredients together, refrigerate for 30 minutes to an hour (or more) for the flavors to meld together. Serve as a side salad or a light meal.
