    2 tsp. Olive Oil
    1/2 medium Onion, finely chopped
    1 medium Carrott, shredded
    2 T minced Celery
    2 T minced Yellow Bell Pepper
    18 oz. Lean Ground Beef
    1/2 c. Quick-Cook Oats
    1 Large Egg
    2 T Tomato Paste
    4 cloves Garlic, minced
    1/2 tsp dried Rosemary
    1 tsp ground Sage
    1/2 tsp ground Thyme
    1 tsp Hot Pepper Sauce
    1/4 c. Tomato Sauce


Preheat oven to 350.
In skillet, heat oil & saute onion, celery, carrot and bell pepper until softened, about 5 minutes.
In large bowl combine sauteed veggies, beef, oats, egg, tomato paste, garlic, herbs and pepper sauce. Shape into loaf and put into oven. Baste with tomato sauce after 30 minutes until cooked through, about 1 hour - 1 hour 15 minutes.
