Ingredients

2 large slice zucchini
1 lb turkey or chicken ground
1 red pepper diced
1 c diced onion
1 tsp garlic minced
2 c low fat marinara sauce
2 egg whites
2/3 c low fat mozzarella
1/4 c grated parmesean
Directions
Preheat 325
spray baking sheet with pam, set aside
Cut zucchini lengthwise place on sheet and spray lightly with cooking spray.
groil till tender and lightly browned (8 min)
Set aside to cool
Cook meat in skillet over med-high. Stir to break up clumps(3 min). Add pepper, onion, garlic. Cook till no longer pink approx 4 more minutes. Stir in sauce and bring to boil. Reduce heat and simmer for 5 min. Stirring frequently . Will be thick.
Combine eggs, cottage cheese, black pepper and italian seasoning in seperate bowl.
Spread half meat sauce in 8 x 8 greased pan. Layer 1/2 zucchini slices. Then 1/2 cottage cheese mix. Then 1/2 mozzarella. Repeat. Sprinkle with Parmesean. Bake for 50 min till bubbly and lightly browned. Let stand 5 min before serving.
