    1 package yellow cake mix
    4 large eggs (or equivalent Egg Beaters)
    1 cup water
    1/2 cup oil
    1 box (3.4 oz) Jell-O instant pistachio pudding mix
    1/4 tsp peppermint extract
    6 drops green food coloring
    1 cup miniature semi-sweet chocolate chips (chopped or whole)
    18-20 peppermint patties


Preheat oven to 350 degrees F. Grease and flour a 9"x13" baking pan.

Beat cake mix, eggs, water, oil, pudding mix, peppermint extract, and food coloring together for four minutes.

Fold in one cup of chocolate chips. Pour into 9x13 greased and floured pan.

Bake at 350 degrees for approximately 35 minutes, until a clean tooth pick inserted in the middle comes out clean.

Remove from oven and cover top in a single layer of chocolate mint patties. Return to the oven and heat just until the mint patties melt. Remove cake from the oven and swirl mint topping to frost. Allow to cool completely before serving.
