Number of Servings: 4


    4 Turkey Beast Cutlets (4 oz each)
    1/2C flour
    1/2 C egg substitute
    Non-stick spray
    8oz mushrooms
    4 cloves garlic
    1/2C Marsala wine
    1C chicken broth
    1/3 C Greek yogurt (I used Fage 2%)
    Black Pepper


Season the turkey with salt and dredge in flour, then egg

Heat pan to medium low heat. Spray pan and cook turkey until golden brown on each side (~4 min total)

Wipe pan and return to high heat. Spray again and add mushrooms. Cook 3 minutes without stirring until mushrooms are brown.

When mushrooms are light golden, add garlic and salt to taste. Reduce heat to medium and cook about another minute until garlic is fragrant.

Stir 1.5 TBS flour into the mushrooms. Stir in the wine and chicken broth, bring to a simmer and cook ~3 minutes until it is the consistency of gravy.

Remove pan from heat. Stir in the Greek yogurt and season with salt and pepper to taste.

Spoon the mushroom mixture over turkey and serve.
